5 Quick and Healthy Meals without Using the Stove

Turning on your stove is not a requirement for delicious, healthy meals at home. Whether it is the last days of summer or you are awaiting the first days of spring, Angela Lemond, RDN, CSP, LD, spokesperson for the Academy of Nutrition and Dietetics, recommends using a few key kitchen gadgets to save time and keep things cool in the kitchen.

"A panini or sandwich press is a great way to get a hot and healthy meal on the table fast," says Lemond. "Use a rice cooker to cook multiple servings of rice, quinoa or millet that can be used throughout the week as a side dish or thrown into a salad for added texture." Other helpful tools include a microwave — which can be used to prepare vegetables such as potatoes, broccoli and carrots — and a slow cooker, which gives off very little heat.

Lemond also suggests using precooked ingredients, such as rotisserie chicken, canned beans (first, drain and rinse the beans to reduce sodium by 41 percent) and tomatoes, and canned chicken and tuna to create quick meals in minutes. Also, hold on to leftovers. "When leftovers build up in the fridge [and are still safe to eat], have a MyPlate night and let the kids choose whatever they want as long as they have all the components of a MyPlate setup."

Try these five kid-pleasing meals without using your stove.

Mexican Black Bean Salad

Mix up a Mexican meatless meal by tossing canned (drained and rinsed) black beans with fresh corn, a tomato, bell pepper and red onion. Add avocado, jicama or diced mango for more adventurous eaters. Toss with lime juice and olive oil, and serve over crunchy romaine lettuce with whole-grain tortilla chips.

Slow Cooker Double-Duty Roast

Prepare your favorite beef or pork roast in a slow cooker, and serve half for dinner. Reserve the remaining roast to use as a filling for tacos or sandwiches later in the week. Try shredded pork tacos with salsa made with fresh pineapple, red bell pepper, jalapeno, cilantro and lime juice. Toss shredded beef with barbecue sauce, and serve on toasted whole-grain hamburger buns with a fresh green salad or crunchy coleslaw.

Chicken Salad Sliders

Registered dietitians Liz Weiss and Janice Bissex recommend this kid-tested chicken salad for hot evenings. "Mix together chopped rotisserie chicken, toasted chopped pecans or walnuts, quartered seedless grapes, light mayonnaise, chopped tarragon, and salt and pepper to taste. Serve on whole-grain slider buns, dinner rolls or in pita pockets."

Turkey and Apple Waffle Sandwiches

Replace bread with whole-grain frozen waffles for a new spin on sandwich night. Prepare the waffles according to the package directions using a toaster. Combine light mayonnaise, maple syrup and Dijon mustard, and spread over the waffles. Layer with deli turkey, sliced Granny Smith apple and spring mix salad greens.

Microwave Stuffed Potatoes

Use a microwave for easy stuffed potatoes. Prick medium russet or sweet potatoes with a fork and microwave on high power for 6 to 8 minutes or until tender. Split the potatoes and scoop out some of the flesh. Add your favorite seasoning to the scooped out potato flesh, and spoon back into the potato shells. Try topping baked potatoes with guacamole, chopped tomato and cilantro, or stuff sweet potatoes with broccoli, walnuts and dried cranberries.

Let the Percent Daily Values Be Your Guide

Use percent Daily Values (DV) to help evaluate how a particular food fits into your daily meal plan.

Daily Values are average levels of nutrients for a person eating 2,000 calories a day. A food item with a 5 percent DV of fat provides 5 percent of the total fat that a person consuming 2,000 calories a day should eat.
Percent DV are for the entire day, not just one meal or snack
You may need more or less than 2,000 calories per day. For some nutrients you may need more or less than 100 percent DV.
The High and Low of Daily Values

Low is 5 percent or less. Aim low in saturated fat, trans fat, cholesterol and sodium.
High is 20 percent or more. Aim high in vitamins, minerals and fiber.
Limit Saturated Fat, Added Sugars and Sodium

Eating less saturated fat, added sugars and sodium may help reduce your risk for chronic disease.

Saturated fat and trans fat are linked to an increased risk of heart disease.
Eating too much added sugar makes it difficult to meet nutrient needs within your calorie requirement.
High levels of sodium can add up to high blood pressure.

Protein
A percentage Daily Value for protein is not required on the label. Eat moderate portions of lean meat, poultry, fish, eggs, low-fat milk, yogurt and cheese, plus beans and peas, peanut butter, seeds and soy products.
Carbohydrates
There are three types of carbohydrates: sugars, starches and fiber. Eat whole-grain breads, cereals, rice and pasta plus fruits and vegetables.
Sugars
Simple carbohydrates, or sugars, occur naturally in foods such as fruit juice (fructose) and milk (lactose) or come from refined sources such as table sugar (sucrose) or corn syrup. Added sugars will be included on the Nutrition Facts label in 2018. The 2015-2020 Dietary Guidelines for Americans recommends consuming no more than 10 percent of daily calories from added sugars.
Check the Ingredient List

Foods with more than one ingredient must have an ingredient list on the label. Ingredients are listed in descending order by weight. Those in the largest amounts are listed first. This information is particularly helpful to individuals with food sensitivities, those who wish to avoid pork or shellfish, limit added sugars or people who prefer vegetarian eating.

Breasts vs. Thighs: Which Is More Nutritious?

For more than a decade, the preference for poultry, especially chicken, has been increasing in the United States. Eating away from home more often has been cited as one reason. For others, the choice was made for health reasons. Poultry (without the skin) is often recommended as a substitute for red meat, since it is lower in saturated fat. Although leaner cuts of beef and pork are available.

There are many options when it comes to chicken. It's sold whole or in parts as chicken breasts, thighs, or wings and is available skinless and boneless.

Price can be an influence when choosing a thigh over a breast, but taste and how the chicken is prepared rank high as well.

Tastier...But Is It Healthier?

Some people prefer the taste of dark meat over white meat and consider it to be more tender and flavorful.

Both chicken thighs and breasts are good sources of lean protein. However, they differ in the amount of calories, fat and saturated fat. For example, a 3-ounce skinless, chicken breast provides about 140 calories, 3 grams of total fat and just 1 gram of saturated fat.

The same amount of dark chicken meat without the skin would provide three times the amount of fat for a total of 9 grams of fat, 3 grams of saturated fat and 170 calories. This difference may not seem like much, but depending on the portion size it can really add up.

Another option is to choose dark turkey meat, which has fewer calories and fat compared to a chicken thigh. A 3-ounce portion has about 134 calories, 5 grams of total fat and 1.5 grams of saturated fat.

It's also a good idea to look at the Nutrition Facts label. Some poultry products are injected with salt, which helps to keep it moist. Most Americans get too much salt from the foods they eat, so finding ways to reduce sodium by reviewing the nutrition facts can help.

Cooking Matters, Too!

Of course, how the poultry is prepared will also make a difference in the amount of calories and fat. Chicken and turkey can be baked, grilled, roasted or fried; seasoned, stuffed or coated with breading. Baking, grilling and roasting are considered healthier options, so look for these descriptions when eating out and limit all types of fried and deep fried foods, including poultry. At home, keeping the skin on while cooking will help keep chicken and turkey moist and removing the skin before eating will help reduce calories and fat.

Keep it Safe

No matter which type of poultry you choose to buy and prepare at home, remember to handle it properly. Raw chicken and turkey should not be rinsed before cooking, but be sure to wash your hands with soap and warm water for at least 20 seconds before and after handling raw poultry.

Chicken and turkey that is purchased frozen should be thawed on the bottom shelf of the refrigerator. Use separate utensils, containers, and cutting boards for the raw and cooked foods. All poultry, regardless of the cooking method, should be cooked to an internal temperature of 165 degrees Fahrenheit. A thermometer inserted into the thickest part will help determine if it's reached the appropriate temperature.

Storing foods safely is also important and will help to reduce the risk of foodborne illness. Perishable foods, like poultry, should be refrigerated within two hours and within one hour if the temperature is above 90 degrees. The same is true for leftovers when eating out, and they should be reheated to 165° F and eaten within three to four days.

Inflammation and Diet

Inflammation is a protective process you are probably more familiar with than you think. It's the body's method of healing itself in response to an injury or exposure to a harmful substance. This is useful when, for example, skin is healing from a cut; however, inflammation is not always beneficial.

Chronic (or ongoing) inflammation occurs when the immune system attacks the body's healthy cells leading to autoimmune diseases such as rheumatoid arthritis, states of immune deficiency including Crohn's disease or skin conditions including psoriasis. Underlying chronic inflammation also may play a role in heart disease, diabetes and Alzheimer's disease.

Evidence supporting the impact of specific foods on inflammation in the body is limited. We know that some foods have the capacity to suppress inflammation, but it's unclear how often and how much is needed for this benefit. Though there's promising research for the impact of foods such as fatty fish, berries and tart cherry juice, but beware of anything touted as an anti-inflammatory miracle.

"Current science advocates overall good nutrition to help enhance the body's immune system and provide antioxidants to reduce inflammatory stress," explains Cheryl Orlansky, registered dietitian nutritionist and certified diabetes educator.

"Healthy fats, such as omega-3 and omega-6 fatty acids, reduce inflammation and help regulate membrane function," says Orlansky. These types of fats should be included in a healthy diet. "Remove those fats that turn on inflammatory processes, such as saturated fat from meats, butter, cream sauces, fried foods and trans fat found in many processed foods," Orlansky says.

That's the way to go versus focusing on one specific "superfood."

Eating to Reduce Inflammation

Luckily, eating with reduced inflammation in mind may be easier than you think.

Let fruits and vegetables make up at least half your plate at meals. Take care to regularly fit in fresh, frozen or dried berries and cherries. Be sure to eat a variety of vegetables, including leafy greens such as kale, chard and Brussels sprouts.
Opt for plant-based sources of protein including beans, nuts and seeds.
Choose whole grains instead of refined ones. Give up white rice and replace it with brown, black or wild rice; whole oats or barley for cream of wheat; and whole-wheat bread instead of white.
Pick heart-healthy fats as opposed to not so healthy ones. Olive oil, avocados, nuts and seeds are a few delicious choices.
Choose fatty fish such as salmon, sardines and anchovies to get a heart-healthy dose of omega-3 fatty acids.
Season your meals with fresh herbs and spices. They pack a flavorful and antioxidant-rich punch.
Though diet is important, it's not the only factor. Quality and duration of sleep and other lifestyle factors can have a direct impact on inflammation.

Overall, to avoid issues with chronic inflammation, make it your mission to achieve a healthy diet, maintain a healthy weight, get adequate sleep and engage in regular physical activity.

What Is Iron?

Iron is a mineral, and its main purpose is to carry oxygen in the hemoglobin of red blood cells throughout the body so cells can produce energy. Iron also helps remove carbon dioxide. When the body's iron stores become so low that not enough normal red blood cells can be made to carry oxygen efficiently, a condition known as iron deficiency anemia develops.

When levels of iron are low, fatigue, weakness and difficulty maintaining body temperature often result. Other symptoms may include:

Pale skin and fingernails
Dizziness
Headache
Glossitis (inflamed tongue)
Even though iron is widely available in food, some people, like adolescent girls and women ages 19 to 50 years old may not get the amount they need on a daily basis. It is also a concern for young children and women who are pregnant or capable of becoming pregnant. If treatment for iron deficiency is needed, a health-care provider will assess iron status and determine the exact form of treatment — which may include changes in diet and/or taking supplements.

Babies need iron for brain development and growth. They store enough iron for the first four to six months of life. A supplement may be recommended by a pediatrician for a baby that is premature or a low-birth weight and breastfed. After six months, their need for iron increases, so the introduction of solid foods when the baby is developmentally ready can help to provide sources of iron. Most infant formulas are fortified with iron.

How much iron do you need? While your body is very good at adapting to lower or higher levels by absorbing more or less iron as needed, the recommended levels are set to meet the needs of the greater majority of the population. Here are the current Recommended Dietary Allowances (RDAs) for iron:

Iron in food exists as two types, heme and non-heme. Animal foods such as meat, seafood and poultry provide both types and are better absorbed by the body. Non-heme iron is found in plant foods, such as spinach and beans, grains that are enriched, like rice and bread, and some fortified breakfast cereals. To increase the absorption of iron from plant sources, it’s recommended to eat them with meat, seafood, or poultry or a good source of vitamin C, such as citrus fruits, kiwi, strawberries or bell peppers. A good way to improve your iron intake is by eating a balanced, healthy diet that includes a variety of foods.

Is Raw Seafood Safe To Eat?

People have been eating raw seafood from the beginning of time. But does that mean we should be doing so now?

Our planet has changed over the centuries. Modern conveniences have led to the polluting of our environment — and that includes our open oceans, lakes, seas, rivers and streams. Most of the fish we consume are from these bodies of water, so environmental contamination is one issue to consider when selecting seafood. One contaminant of particular concern is methylmercury, which is found in varying levels in fish and shellfish — whether cooked or raw. Refer to the Environmental Protection Agency and Food and Drug Administration for advice about mercury in fish and shellfish.

Raw Seafood and Food Poisoning

Besides methylmercury, there are additional concerns if you plan to eat raw seafood. For most healthy people, eating reasonable amounts of raw seafood poses only a small health risk. Nonetheless, there is a risk for everyone. Foodborne illness can be the result, potentially causing severe vomiting, diarrhea and abdominal pain, among other symptoms.

Major types of food poisoning that can result from eating raw or undercooked fish and shellfish include Salmonella and Vibrio vulnificus. For raw shellfish connoisseurs, especially raw oyster lovers, you specifically need to know about the risk for Vibrio infections. Vibrio vulnificus is a bacterium that lives in warm seawater and is not caused by pollution. While not common, these infections were 43 percent higher in 2012 compared with 2006–2008, according to 2012 FoodNet data.

To prevent any type of food poisoning, know that neither hot sauce nor alcohol kills bacteria, despite popular myth. The best rule of thumb is to follow good food safety practices and properly cook all seafood. Prepare fin fish until it reaches 145°F — or until the flesh is opaque and separates easily with a fork; prepare shellfish until the flesh is opaque; or, for clams, oysters, and mussels, until the shells open.

One other safety tip of interest: If you do decide to eat raw fish, choose fish that has been previously frozen. That's because freezing will kill any potential parasites present. Unfortunately, freezing doesn't kill every harmful organism.

High-Risk Individuals

For people at high-risk for foodborne illness, severe and life-threatening illness may result from consuming raw or undercooked fish and shellfish. These individuals include those with compromised immune systems or with decreased stomach acidity, as well as pregnant women, infants, young children and older adults. Raw fish and shellfish consumption is never advised for high-risk individuals. If you're in this category, thoroughly cook fish and shellfish. If unsure of risk level, consult with your physician or registered dietitian nutritionist.

Keeping it Safe: from Market to Mealtime

Follow these key tips when buying, storing and preparing fresh, raw seafood.

At the market:

Be sure fresh seafood is properly refrigerated below 40°F or well-packed with ice.
Look for fish with shiny, firm flesh and no overly "fishy" odor.
In your fridge:

Keep fresh fish well wrapped or in air-tight containers for no more than two days.
Store fresh, pasteurized or smoked seafood between 32°F and 38°F; store live clams, crabs, crayfish, lobsters, mussels and oysters in well ventilated containers.
During preparation:

Keep raw and cooked seafood separate, including using separate cutting boards.
Wash hands, cutting boards, plates and utensils thoroughly between handling raw seafood and any ready-to-eat food.
Dining Out Advice

There are a plethora of well-liked raw and undercooked fish and shellfish items on menus today. For healthy individuals, these foods can generally be consumed safely when they're from reputable restaurants or markets that use fresh, high-quality ingredients and follow proper food safety practices. But be aware of these menu items, especially if you’re in the high-risk category, since they contain raw or undercooked seafood: sushi, sashimi, raw oysters or clams on the half shell, ceviche, crudo, gravlax, poke, tuna tartare and tuna carpaccio.

The Bottom Line
In general, the health benefits associated with eating a variety of properly cooked fish and shellfish outweigh risks in healthy individuals. However, the same does not apply to raw fish and shellfish. Be aware of food safety considerations when eating it. And if you're a high-risk individual, simply do not eat raw seafood.

According to the Tea Association of the U.S.A. Inc., the number of Americans who will drink tea today is over 158 million, about half the U.S. population. And, the trend of increased consumer purchases of tea is expected to continue over the next five years.

Far from being a fictitious promise, tea has been lauded for an array of potential health benefits — from reducing cancer and heart disease risk to improving dental health and boosting weight loss.

Tea and Heart Health

The strongest evidence is on the side of heart health, attributed to the antioxidant effects in tea. Evidence supporting tea as a weight-loss aid is based mainly on studies that used tea extracts (epigallocatechin gallate and other polyphenols and caffeine). These results may not be directly applicable to brewed tea consumed in normal amounts.

The caffeine content of tea varies widely depending on the kind of tea used and the way in which it is brewed. Typical levels for tea are less than half that of coffee, ranging from 20 to 90 milligrams per 8 fluid ounces (compared to 50 to 120 milligrams in coffee).

Staying Away from Fad Diets

With all the focus on weight in our society, it isn't surprising that millions of people fall prey to fad diets and bogus weight-loss products. Conflicting claims, testimonials and hype by so-called "experts" can confuse even the most informed consumers. The bottom line is simple: If a diet or product sounds too good to be true

There are no foods or pills that magically burn fat. No super foods will alter your genetic code. No products will miraculously melt fat while you watch TV or sleep. Some ingredients in supplements and herbal products can be dangerous and even deadly for some people.

Steer clear of any diet plans, pills and products that make the following claims:

Rapid Weight Loss
Slow, steady weight loss is more likely to last than dramatic weight changes. Healthy plans aim for a loss of no more than 1 to 2 pounds per week. If you lose weight quickly, you'll lose muscle, bone and water. You also will be more likely to regain the pounds quickly.

Quantities and Limitations
Ditch diets that allow unlimited quantities of any food, such as grapefruit and cabbage soup. It's boring to eat the same thing over and over and hard to stick with monotonous plans. Avoid any diet that eliminates or severely restricts entire food groups, such as carbohydrates. Even if you take a multivitamin, you'll still miss some critical nutrients.

Specific Food Combinations
There is no evidence that combining certain foods or eating foods at specific times of day will help with weight loss. Eating the "wrong" combinations of food doesn't cause them to turn to fat immediately or to produce toxins in your intestines, as some plans claim.

Reagent preparation

Test method

Heating method
The method is simple. It does not need any reagent.
First, take a glass test tube, pour the urine to be checked at two-thirds and add 2% acid or a few drops of vinegar.
